Hash Browns

These are so good and so easy. Some people call them home fries...I think that is a dumb name.

I use a cast iron skillet, but you can use whatever skillet you want. Put a nice layer of vegetable oil in it and turn the stove on medium heat...let it warm for about 5-6 minutes.

Peel about half of a potato per serving. Chop them up into cubes, about the size or smaller of a sugar cube. Then place them in the skillet. About every minute or so, move the potatoes around on the skillet so they don't stick to the bottom.

After a couple minutes, evenly spread some paprika on the potatoes. A couple minutes later, some seasoned salt. A couple minutes later, some tony's...then slightly less on the salt a couple minutes after that. After 10 minutes have gone by, put about a tablespoon of butter in the skillet. It should start sizzling, and turn the heat up to medium-high. Keep it there for 4-5 minutes and continue moving the potatoes around. Take them out of the skillet and place them on a paper towel, pat them down and eat them.
